Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1/2 cup yellow onion, very finely minced
  • 1/2 cup fresh Italian parsley, finely chopped
  • 3 cloves garlic, minced into a paste
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

Instructions:

  1. Combine the minced onion, garlic, and chopped parsley in a bowl. Mix these aromatics first to ensure they are evenly distributed.
  2. Add the ground beef and the spice blend to the aromatics. Using your hands or a fork, gently fold the mixture until the spices are evenly distributed, avoiding over-working the meat.
  3. Divide the mixture into 8 equal portions. Mold the meat around skewers into oblong shapes approximately 1 inch thick, pressing firmly to ensure adherence.
  4. Place kabobs on a screaming-hot skillet or grill. Sear for 3–4 minutes per side until a mahogany-colored crust forms and internal temperature reaches 160°F (71°C).
