Ingredients:

  • 4 medium fresh peaches, halved and pitted
  • 2 tbsp unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 4 scoops vanilla ice cream

Instructions:

  1. Turn your oven broiler to high and position your oven rack about 6 inches from the heat source.
  2. Cover a broiler-safe baking sheet with aluminum foil to prevent sugar from sticking.
  3. Set the peach halves cut-side up on the foil, spacing them apart to allow heat to circulate.
  4. Brush the cut surface of each peach generously with melted butter.
  5. Stir the brown sugar and cinnamon together in a small bowl, then sprinkle the mixture evenly over the buttered peaches, pressing lightly.
  6. Slide the pan under the broiler and cook for 3 to 7 minutes, watching closely.
  7. Remove the pan once the sugar is bubbling and the edges have turned a deep mahogany brown.
  8. Let the peaches sit for 2 minutes to allow the syrup to thicken.
  9. Place one warm peach half in a bowl and immediately top with a generous scoop of vanilla ice cream.
  10. Drizzle any remaining brown sugar syrup from the pan over the ice cream.
