Ingredients:
- 4 medium fresh peaches, halved and pitted
- 2 tbsp unsalted butter, melted
- 1/4 cup light brown sugar, packed
- 1/2 tsp ground cinnamon
- 4 scoops vanilla ice cream
Instructions:
- Turn your oven broiler to high and position your oven rack about 6 inches from the heat source.
- Cover a broiler-safe baking sheet with aluminum foil to prevent sugar from sticking.
- Set the peach halves cut-side up on the foil, spacing them apart to allow heat to circulate.
- Brush the cut surface of each peach generously with melted butter.
- Stir the brown sugar and cinnamon together in a small bowl, then sprinkle the mixture evenly over the buttered peaches, pressing lightly.
- Slide the pan under the broiler and cook for 3 to 7 minutes, watching closely.
- Remove the pan once the sugar is bubbling and the edges have turned a deep mahogany brown.
- Let the peaches sit for 2 minutes to allow the syrup to thicken.
- Place one warm peach half in a bowl and immediately top with a generous scoop of vanilla ice cream.
- Drizzle any remaining brown sugar syrup from the pan over the ice cream.
