Ingredients:

  • 6 cups sliced fresh peaches (900g)
  • 1 cup light brown sugar (200g)
  • 2 tbsp cornstarch (16g)
  • 1 tbsp lemon juice (15ml)
  • 1/2 tsp ground cinnamon (1g)
  • 1/4 tsp ground nutmeg (0.5g)
  • 3/4 tsp salt (4.5g)
  • 1 1/2 cups all-purpose flour (180g)
  • 2 tsp baking powder (8g)
  • 1/2 cup unsalted butter (115g), melted
  • 3/4 cup whole milk (180ml)
  • 1 tsp vanilla extract (5ml)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with 1/2 cup brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and 1/4 tsp salt until evenly coated.
  3. Pour the peach mixture into a 9x9-inch baking dish, spreading them evenly to the edges.
  4. In the same bowl, whisk together the all-purpose flour, remaining 1/2 cup brown sugar, baking powder, and 1/2 tsp salt.
  5. Stir in the melted butter, milk, and vanilla extract using a spatula until just combined; do not overmix.
  6. Dollop the batter over the peaches in the baking dish.
  7. Bake for 45 minutes until the crust is mahogany-colored and the peach filling is bubbling.
