Ingredients:
- 6 cups sliced fresh peaches (900g)
- 1 cup light brown sugar (200g)
- 2 tbsp cornstarch (16g)
- 1 tbsp lemon juice (15ml)
- 1/2 tsp ground cinnamon (1g)
- 1/4 tsp ground nutmeg (0.5g)
- 3/4 tsp salt (4.5g)
- 1 1/2 cups all-purpose flour (180g)
- 2 tsp baking powder (8g)
- 1/2 cup unsalted butter (115g), melted
- 3/4 cup whole milk (180ml)
- 1 tsp vanilla extract (5ml)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced peaches with 1/2 cup brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, and 1/4 tsp salt until evenly coated.
- Pour the peach mixture into a 9x9-inch baking dish, spreading them evenly to the edges.
- In the same bowl, whisk together the all-purpose flour, remaining 1/2 cup brown sugar, baking powder, and 1/2 tsp salt.
- Stir in the melted butter, milk, and vanilla extract using a spatula until just combined; do not overmix.
- Dollop the batter over the peaches in the baking dish.
- Bake for 45 minutes until the crust is mahogany-colored and the peach filling is bubbling.
