Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • 1/4 cup light brown sugar, packed
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, chilled and cubed

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with brown sugar, cornstarch, cinnamon, lemon juice, and salt. Stir gently to ensure every slice is coated.
  3. Transfer the peach mixture into a greased 9x9 inch baking dish, spreading it into an even layer.
  4. In a separate bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt.
  5. Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or fingertips to work the butter in until the mixture resembles coarse crumbs with some pea-sized lumps.
  6. Sprinkle the oat mixture evenly over the peaches, pressing down very lightly.
  7. Bake for 30–35 minutes until the topping is deep golden-brown and the peach juices are bubbling vigorously around the edges.
