Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 1/4 cup light brown sugar, packed
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 tbsp fresh lemon juice
- 1/2 tsp salt
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, chilled and cubed
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced peaches with brown sugar, cornstarch, cinnamon, lemon juice, and salt. Stir gently to ensure every slice is coated.
- Transfer the peach mixture into a greased 9x9 inch baking dish, spreading it into an even layer.
- In a separate bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt.
- Add the chilled, cubed butter to the dry ingredients. Use a pastry cutter or fingertips to work the butter in until the mixture resembles coarse crumbs with some pea-sized lumps.
- Sprinkle the oat mixture evenly over the peaches, pressing down very lightly.
- Bake for 30–35 minutes until the topping is deep golden-brown and the peach juices are bubbling vigorously around the edges.
