Ingredients:
- 1 cup (225g) unsalted butter, browned and cooled
- 3/4 cup (150g) granulated sugar
- 3/4 cup (165g) packed brown sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) sea salt
- 1 tsp (2g) ground cinnamon
- 1 1/2 cups (150g) quick-rolled oats
- 2 cups (340g) semi-sweet chocolate chips
- 1/2 cup (60g) chopped walnuts
Instructions:
- Melt butter in a saucepan over medium heat, whisking constantly until it foams and small brown specks appear. Remove from heat immediately.
- In a large bowl, beat the browned butter with granulated sugar and brown sugar until the mixture is smooth and slightly aerated.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Using a spatula, fold in the quick-rolled oats, semi-sweet chocolate chips, and chopped walnuts until evenly distributed.
- Drop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
- Bake in a preheated oven at 350°F (175°C) for 9–11 minutes until edges are golden-brown but centers remain soft.
- Remove from oven and allow to firm up on the pan before transferring to a wire cooling rack.
