Ingredients:

  • 1 lb chicken breast
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 6 cups romaine lettuce, chopped
  • 1/2 cup parmesan cheese, shaved or shredded
  • 1/2 cup caesar dressing
  • 1 cup croutons, slightly crushed
  • 1 tbsp fresh lemon juice
  • 4 large 10-inch flour tortillas

Instructions:

  1. Season chicken breast with salt and pepper.
  2. Heat olive oil in a skillet over medium high heat.
  3. Sear chicken for 5-7 minutes per side until the internal temperature hits 165°F (74°C) and the outside looks golden brown.
  4. Let meat rest for 5 minutes on a cutting board Note: this prevents juices from leaking into the wrap before slicing into thin strips.
  5. Combine chopped romaine, sliced chicken, parmesan, and crushed croutons in a large bowl.
  6. Drizzle caesar dressing and lemon juice over the mix.
  7. Toss gently with tongs until the ingredients look glossy and evenly coated.
  8. Place a flour tortilla on a flat surface.
  9. Scoop 3/4 cup of the mixture into the center, leaving 2 inches of space on the sides.
  10. Fold the sides in first, then roll from the bottom up, tucking the filling tightly.
