- 6 cups romaine lettuce, chopped
- 1/2 cup parmesan cheese, shaved or shredded
- 1/2 cup caesar dressing
- 1 cup croutons, slightly crushed
- 1 tbsp fresh lemon juice
- 4 large 10-inch flour tortillas
Instructions:
- Season chicken breast with salt and pepper.
- Heat olive oil in a skillet over medium high heat.
- Sear chicken for 5-7 minutes per side until the internal temperature hits 165°F (74°C) and the outside looks golden brown.
- Let meat rest for 5 minutes on a cutting board Note: this prevents juices from leaking into the wrap before slicing into thin strips.
- Combine chopped romaine, sliced chicken, parmesan, and crushed croutons in a large bowl.
- Drizzle caesar dressing and lemon juice over the mix.
- Toss gently with tongs until the ingredients look glossy and evenly coated.
- Place a flour tortilla on a flat surface.
- Scoop 3/4 cup of the mixture into the center, leaving 2 inches of space on the sides.
- Fold the sides in first, then roll from the bottom up, tucking the filling tightly.
