Ingredients:
- 3 to 4 medium overripe bananas (approx. 1.5 cups mashed)
- 0.5 cup unsalted butter, melted and cooled
- 1 large egg, room temperature
- 2 tbsp sour cream or Greek yogurt
- 1 tsp vanilla extract
- 1.5 cups all-purpose flour
- 0.5 cup granulated sugar
- 0.5 cup light or dark brown sugar, packed
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 0.5 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Peel the bananas and mash them in a large bowl with a fork until mostly liquid with only small chunks remaining.
- Whisk the melted butter into the mashed bananas until fully incorporated. Add the granulated sugar, brown sugar, egg, sour cream, and vanilla extract. Stir vigorously until the mixture looks glossy.
- Gently fold in the all-purpose flour, baking soda, salt, and cinnamon using a silicone spatula. Mix until just combined to avoid over-developing the gluten.
- Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
