Ingredients:

  • 3 to 4 medium overripe bananas (approx. 1.5 cups mashed)
  • 0.5 cup unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 2 tbsp sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup light or dark brown sugar, packed
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 0.5 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. Peel the bananas and mash them in a large bowl with a fork until mostly liquid with only small chunks remaining.
  2. Whisk the melted butter into the mashed bananas until fully incorporated. Add the granulated sugar, brown sugar, egg, sour cream, and vanilla extract. Stir vigorously until the mixture looks glossy.
  3. Gently fold in the all-purpose flour, baking soda, salt, and cinnamon using a silicone spatula. Mix until just combined to avoid over-developing the gluten.
  4. Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.
