Ingredients:
- 2 ripe Hass avocados (approx. 10 oz / 280g)
- 1/4 cup sour cream
- 1 tbsp fresh lime juice
- 1/4 cup red onion, finely minced
- 2 tbsp fresh cilantro, chopped
- 1 clove garlic, minced into a paste
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Scoop the avocado flesh into a medium mixing bowl. Note: Use a large spoon to get around the pit cleanly.
- Mash the fruit with a fork until you see small, pea sized lumps.
- Add the sour cream, lime juice, and garlic paste.
- Stir slowly with a spatula until the color is a uniform, vibrant green.
- Gently fold in the minced red onion. Note: Don't over mix or the onion will bleed into the cream.
- Stir in the chopped cilantro.
- Sprinkle the kosher salt over the top.
- Add the cracked black pepper.
- Fold the mixture 3-4 times until everything is distributed but the avocado remains thick.
- Taste a small amount with a chip to check if the salt needs a tiny adjustment.
