Ingredients:

  • 6 cups peeled and sliced fresh peaches
  • 1/2 cup packed brown sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup old fashioned rolled oats
  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/2 cup chilled and cubed unsalted butter
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with brown sugar, cornstarch, lemon juice, cinnamon, and salt until evenly coated.
  3. Transfer the peach mixture into a 9x9 inch baking dish, spreading it into an even layer.
  4. In a separate bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt.
  5. Add the chilled, cubed butter to the oat mixture. Use a pastry cutter or fork to work the butter in until the texture resembles coarse crumbs with pea-sized lumps.
  6. Sprinkle the crumble evenly over the peaches without pressing it down.
  7. Bake on the center rack for 30–35 minutes, or until the topping is deep golden brown and juices are bubbling around the edges.
  8. Let the crisp rest for 10 minutes before serving to allow the sauce to set.
