Ingredients:

  • 1 lb fresh peaches, sliced into wedges
  • 5 oz baby arugula or mixed spring greens
  • 4 oz crumbled goat cheese
  • 1/2 cup toasted walnuts or slivered almonds
  • 1/4 cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1/4 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Combine the olive oil, balsamic vinegar, honey, Dijon, salt, and pepper in a jar. Shake vigorously for 30 seconds until the mixture is thick and opaque.
  2. Slice the peaches into uniform wedges and tear the basil leaves by hand.
  3. Place the arugula in a large bowl and toss with half of the dressing.
  4. Arrange the peach wedges on top of the greens. Sprinkle with goat cheese and toasted walnuts.
  5. Drizzle the remaining dressing over the fruit and garnish with torn basil.
