Ingredients:
- 1 lb fresh peaches, sliced into wedges
- 5 oz baby arugula or mixed spring greens
- 4 oz crumbled goat cheese
- 1/2 cup toasted walnuts or slivered almonds
- 1/4 cup fresh basil leaves, torn
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- 1/4 tsp sea salt
- 1/4 tsp cracked black pepper
Instructions:
- Combine the olive oil, balsamic vinegar, honey, Dijon, salt, and pepper in a jar. Shake vigorously for 30 seconds until the mixture is thick and opaque.
- Slice the peaches into uniform wedges and tear the basil leaves by hand.
- Place the arugula in a large bowl and toss with half of the dressing.
- Arrange the peach wedges on top of the greens. Sprinkle with goat cheese and toasted walnuts.
- Drizzle the remaining dressing over the fruit and garnish with torn basil.
