Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1 tsp (5g) baking powder
  • 1 tsp (3g) ground cinnamon
  • 1/2 tsp (3g) salt
  • 1/4 cup (50g) brown sugar
  • 1 cup (240ml) milk
  • 1 large egg
  • 1/4 cup (60ml) maple syrup
  • 2 tbsp (28g) unsalted butter, melted
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) fresh blueberries
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 8x8-inch dish or line it with parchment. Note: This ensures a clean release later.
  2. In a large bowl, whisk together the rolled oats, baking powder, cinnamon, salt, and brown sugar. Note: Whisking ensures the baking powder is evenly distributed.
  3. Make a hole in the center of your dry oats.
  4. Pour in the milk, egg, maple syrup, melted butter, and vanilla extract.
  5. Stir gently with a spatula until the oats are just coated. Note: Do not over mix or the texture becomes rubbery.
  6. Gently fold in the fresh blueberries and chopped walnuts. Note: Be careful not to burst the berries.
  7. Spread the mixture into the dish and smooth the top with your spatula.
  8. Bake for 30-35 minutes until the edges are deep mahogany brown and the center is set.
