Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (5g) baking powder
- 1 tsp (3g) ground cinnamon
- 1/2 tsp (3g) salt
- 1/4 cup (50g) brown sugar
- 1 cup (240ml) milk
- 1 large egg
- 1/4 cup (60ml) maple syrup
- 2 tbsp (28g) unsalted butter, melted
- 1 tsp (5ml) vanilla extract
- 1 cup (150g) fresh blueberries
- 1/2 cup (60g) chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 8x8-inch dish or line it with parchment. Note: This ensures a clean release later.
- In a large bowl, whisk together the rolled oats, baking powder, cinnamon, salt, and brown sugar. Note: Whisking ensures the baking powder is evenly distributed.
- Make a hole in the center of your dry oats.
- Pour in the milk, egg, maple syrup, melted butter, and vanilla extract.
- Stir gently with a spatula until the oats are just coated. Note: Do not over mix or the texture becomes rubbery.
- Gently fold in the fresh blueberries and chopped walnuts. Note: Be careful not to burst the berries.
- Spread the mixture into the dish and smooth the top with your spatula.
- Bake for 30-35 minutes until the edges are deep mahogany brown and the center is set.
