Ingredients:
- 2 lbs Sirloin or Ribeye steak, trimmed of excess fat and cut into 1-inch cubes
- 2 tbsp Avocado or Grapeseed oil
- 1.5 tsp Coarse Kosher salt
- 1 tsp Freshly cracked black pepper
- 4 tbsp Unsalted butter, cubed
- 4 cloves Garlic, smashed and minced
- 1 tbsp Fresh rosemary, finely chopped
- 1 tbsp Fresh thyme leaves
- 0.5 tsp Red pepper flakes
Instructions:
- Pat the steak cubes completely dry with paper towels to ensure a proper sear. Season generously with salt and pepper immediately before cooking.
- Heat the oil in a large cast-iron skillet over medium-high heat until shimmering and just starting to smoke. Add the steak bites in a single layer, working in batches if necessary to avoid crowding.
- Sear the steak undisturbed for 2 minutes to form a brown crust. Flip the pieces and cook for another 1-2 minutes.
- Reduce heat to medium. Add the cubed butter, minced garlic, rosemary, thyme, and red pepper flakes. Use a spoon to baste the steak with the foaming herb butter for 60 seconds.
- Remove from heat and let the steak bites rest for 3 minutes before serving to allow juices to redistribute.
