- 6 cups (900g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 2 tbsp (16g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1.5g) salt
- 1 cup (90g) rolled oats
- 1 cup (125g) all-purpose flour
- 1 cup (200g) packed light brown sugar
- 1/2 cup (115g) unsalted butter, melted
- 1/2 tsp (2.5g) ground cinnamon
- 1/4 tsp (1.5g) salt
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss sliced peaches with lemon juice, granulated sugar, cornstarch, cinnamon, and salt.
- Let the fruit mixture sit for 5 minutes to allow the juices to thicken.
- Pour the fruit mixture into a 9x9 inch baking dish, spreading them evenly.
- In a medium bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt.
- Stir in the melted butter until the mixture resembles coarse, wet sand with small clumps.
- Sprinkle the topping evenly over the peaches without pressing it down.
- Bake on the center rack for 40-45 minutes until the filling bubbles and the topping is golden mahogany.
- Let the dish cool for 15 minutes before serving.
