Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 2 tbsp (16g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1/4 tsp (1.5g) salt
  • 1 cup (90g) rolled oats
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 tsp (2.5g) ground cinnamon
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss sliced peaches with lemon juice, granulated sugar, cornstarch, cinnamon, and salt.
  3. Let the fruit mixture sit for 5 minutes to allow the juices to thicken.
  4. Pour the fruit mixture into a 9x9 inch baking dish, spreading them evenly.
  5. In a medium bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt.
  6. Stir in the melted butter until the mixture resembles coarse, wet sand with small clumps.
  7. Sprinkle the topping evenly over the peaches without pressing it down.
  8. Bake on the center rack for 40-45 minutes until the filling bubbles and the topping is golden mahogany.
  9. Let the dish cool for 15 minutes before serving.
