Ingredients:

  • 2 lbs fresh peaches, pitted and sliced into ½ inch wedges
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • ½ tsp ground cinnamon
  • 1 tsp cornstarch
  • 1 cup old-fashioned rolled oats
  • ½ cup almond flour
  • ¼ cup melted coconut oil
  • 2 tbsp maple syrup
  • ½ tsp sea salt
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with honey, lemon juice, cinnamon, and cornstarch until every slice is evenly coated.
  3. Spread the peach mixture evenly into a 9x9 inch baking dish.
  4. In a separate bowl, combine rolled oats, almond flour, and sea salt.
  5. Stir in the melted coconut oil, maple syrup, and vanilla extract; mix until the oats are fully moistened and form small, pebbly clumps.
  6. Sprinkle the oat topping evenly over the peaches, leaving a few fruit slices peaking through for visual appeal.
  7. Bake for 40–45 minutes until the fruit juices are bubbling up the sides and the topping has turned a deep golden-brown and smells nutty.
