Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • 2 tbsp (25g) granulated sugar
  • 1 ¾ cups (415ml) whole milk
  • 2 large eggs
  • ½ cup (115g) unsalted butter, melted and cooled slightly
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Sift the flour, baking powder, salt, and sugar into a large bowl. Whisk the dry ingredients to ensure no clumps of baking powder remain.
  2. In a separate medium bowl, beat the eggs until frothy. Slowly whisk in the milk, melted butter, and vanilla extract, ensuring the butter is not too hot.
  3. Pour the wet mixture into the dry ingredients. Gently whisk until just combined; leave a few small lumps to avoid over-mixing.
  4. Pour roughly ½ cup of batter onto the center of a preheated, greased waffle iron. Cook for 3 to 5 minutes, or until steam stops escaping and waffles are deep golden brown.
  5. Place each finished waffle on a wire cooling rack for 60 seconds before plating to maintain crispness.
