Ingredients:
- 4 cups (600g) fresh peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/2 cup (115g) unsalted butter
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
Instructions:
- In a large bowl, toss sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, and lemon juice.
- Let the peach mixture sit for 10 minutes to macerate and create a natural syrup.
- Preheat oven to 350°F (175°C). Place the butter in a 9x9 inch baking dish and heat in the oven for a few minutes until completely melted and bubbling.
- In a mixing bowl, whisk together flour, 1 cup sugar, baking powder, and salt until no clumps remain.
- Pour in the milk and whisk until just combined, leaving a few tiny lumps for better texture.
- Carefully pour the batter directly over the melted butter in the baking dish without stirring.
- Spoon the macerated peaches and their syrup evenly over the top of the batter.
- Bake for 40 minutes until the crust is golden brown and the peach filling is bubbling.
