Ingredients:

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1/2 cup (115g) unsalted butter
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk

Instructions:

  1. In a large bowl, toss sliced peaches with 1/2 cup sugar, cornstarch, cinnamon, and lemon juice.
  2. Let the peach mixture sit for 10 minutes to macerate and create a natural syrup.
  3. Preheat oven to 350°F (175°C). Place the butter in a 9x9 inch baking dish and heat in the oven for a few minutes until completely melted and bubbling.
  4. In a mixing bowl, whisk together flour, 1 cup sugar, baking powder, and salt until no clumps remain.
  5. Pour in the milk and whisk until just combined, leaving a few tiny lumps for better texture.
  6. Carefully pour the batter directly over the melted butter in the baking dish without stirring.
  7. Spoon the macerated peaches and their syrup evenly over the top of the batter.
  8. Bake for 40 minutes until the crust is golden brown and the peach filling is bubbling.
