Ingredients:
- 1 cup Granulated Sugar (Caster Sugar)
- 1 cup Water
- 1/2 cup Fresh Cranberries, lightly smashed (for syrup)
- 2 medium Cinnamon Sticks (for syrup)
- 3 whole pods Star Anise (for syrup)
- 4 whole Cloves (for syrup)
- 2 fl oz Gin (or Vodka)
- 75 fl oz Fresh Lime Juice
- 75 fl oz Spiced Simple Syrup, chilled
- Top-up Prosecco, Cava, or Champagne (Approx. 75 ml)
- Ice (as needed)
- Fresh Cranberries (for garnish)
- Rosemary Sprigs (for garnish)
- Fine sugar (for optional glass rimming)
Instructions:
- Phase 1: Creating the Spiced Syrup. In a small saucepan, combine the sugar, water, 1/2 cup cranberries, cinnamon, star anise, and cloves.
- Bring the mixture to a low simmer over medium heat, stirring until the sugar is completely dissolved. Do not boil vigorously.
- Reduce heat to low and let the syrup gently simmer for 5–7 minutes. The cranberries should soften and slightly burst, and the liquid will take on a reddish hue.
- Remove the pan from the heat. Let the syrup steep for an additional 15 minutes to allow the spices to fully infuse.
- Pour the syrup through a fine-mesh sieve (or muslin cloth) into an airtight container to remove all solids. Discard the solids.
- Refrigerate the syrup for at least 60 minutes until thoroughly cold. This syrup can be made up to a week in advance.
- Phase 2: Cocktail Assembly. If desired, lightly dampen the rim of your chosen glass and dip it into fine sugar for a frosty, festive edge. Place glassware in the freezer to chill.
- In a cocktail shaker, combine the 2 fl oz Gin (or Vodka), 0.75 fl oz chilled Spiced Simple Syrup, and 0.75 fl oz fresh Lime Juice.
- Fill the shaker three-quarters full with fresh ice cubes. Seal tightly and shake vigorously for 15–20 seconds until the shaker is thoroughly chilled on the outside.
- Strain the cocktail mixture into the chilled, prepared glass, filling it about two-thirds full.
- Gently top the drink with chilled Prosecco, Cava, or Sparkling Wine. Add slowly to maintain the sparkle.
- Garnish with a small sprig of rosemary (clapped gently to release aroma) and thread 2–3 fresh cranberries onto a cocktail pick. Serve immediately.
