Ingredients:
- 6 ripe but firm peaches, halved and pitted
- 2 tbsp unsalted butter, melted
- 3 tbsp wildflower honey
- 1/2 tsp sea salt
- 8 oz mascarpone cheese, chilled
- 2 tbsp honey
- 1 tsp pure vanilla extract
Instructions:
- Slice peaches in half and remove the pits. Pat them dry with a paper towel to ensure a good sear.
- Brush the cut side of each peach with melted butter and a pinch of sea salt.
- In a small bowl, whisk together the mascarpone, honey, and vanilla until the mixture is smooth and holds soft peaks. Store in the fridge until serving.
- Preheat your grill to medium-high heat.
- Place peaches cut-side down directly onto the grates. Grill for 3–5 minutes without moving them, until mahogany-colored grill marks appear.
- Flip the peaches over.
- Immediately drizzle the honey over the charred side of the peaches and grill for an additional 2 minutes until the honey bubbles and thickens into a syrup.
- Remove from heat and place each warm peach half on a plate, topping with a generous dollop of the chilled whipped mascarpone.
