Ingredients:

  • 6 ripe but firm peaches, halved and pitted
  • 2 tbsp unsalted butter, melted
  • 3 tbsp wildflower honey
  • 1/2 tsp sea salt
  • 8 oz mascarpone cheese, chilled
  • 2 tbsp honey
  • 1 tsp pure vanilla extract

Instructions:

  1. Slice peaches in half and remove the pits. Pat them dry with a paper towel to ensure a good sear.
  2. Brush the cut side of each peach with melted butter and a pinch of sea salt.
  3. In a small bowl, whisk together the mascarpone, honey, and vanilla until the mixture is smooth and holds soft peaks. Store in the fridge until serving.
  4. Preheat your grill to medium-high heat.
  5. Place peaches cut-side down directly onto the grates. Grill for 3–5 minutes without moving them, until mahogany-colored grill marks appear.
  6. Flip the peaches over.
  7. Immediately drizzle the honey over the charred side of the peaches and grill for an additional 2 minutes until the honey bubbles and thickens into a syrup.
  8. Remove from heat and place each warm peach half on a plate, topping with a generous dollop of the chilled whipped mascarpone.
