  • 1/2 cup (75g) red onion, finely diced
  • 1 medium (50g) jalapeño, seeded and minced
  • 1/2 cup (15g) fresh cilantro, chopped
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp (2g) lime zest
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Dice the fresh pineapple, red onion, and jalapeño into uniform 1/4-inch pieces and finely chop the cilantro leaves.
  2. Combine the diced pineapple, onion, jalapeño, and cilantro in a large mixing bowl and toss gently to distribute colors evenly.
  3. Drizzle fresh lime juice over the mixture and stir in the lime zest, salt, and pepper.
  4. Let the salsa sit at room temperature for 10 minutes to allow the flavors to meld and the salt to draw out natural juices.
