Ingredients:

  • 2 tbsp (28g) unsalted butter, melted
  • 1/4 cup (50g) packed brown sugar
  • 1/2 tsp (1g) ground cinnamon
  • 1 pinch (0.5g) kosher salt
  • 4 ripe but firm peaches, halved and pitted
  • 1 tbsp (15ml) neutral oil
  • 2 cups (280g) vanilla ice cream
  • 2 tbsp (30ml) honey or maple syrup

Instructions:

  1. Slice the peaches in half and remove the pits.
  2. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, and salt until a thick paste forms.
  3. Using a pastry brush, generously coat the cut side of each peach with the glaze.
  4. Preheat your grill or grill pan to medium-high heat and lightly oil the grates to prevent sticking.
  5. Place peaches cut-side down directly onto the hot grates. Grill for 3–5 minutes without moving them until deep, mahogany-colored grill marks appear and the sugar bubbles.
  6. Flip the peaches and grill the skin side for an additional 2–3 minutes to warm through.
  7. Transfer the hot peaches to individual bowls immediately.
  8. Place one large scoop of vanilla ice cream directly in the center of the warm peach half.
  9. Drizzle with honey or maple syrup and serve immediately.
