Ingredients:
- 1 lb lean ground turkey (93% lean)
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp smoked paprika
- 6 oz fresh baby spinach
- 1 large lemon, zested and juiced
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 2 tbsp fresh parsley, chopped
Instructions:
- Mince your 4 cloves of garlic and zest your lemon.
- Add 2 tbsp of extra virgin olive oil to a large pan over medium high heat. Cook until the oil shimmers and a drop of water flicked in sizzles instantly.
- Add the 1 lb of ground turkey to the hot pan. Don't break it up immediately; let it sit for 60 seconds to develop a golden crust.
- Use a wooden spoon to break the turkey into bite-sized crumbles. Sprinkle in the 1/2 tsp sea salt, 1/4 tsp pepper, and 1/2 tsp smoked paprika.
- Toss in the 1/2 tsp crushed red pepper flakes. Sauté 5 minutes until the meat is no longer pink and looks slightly crispy on the edges.
- Push the meat to the sides and drop the minced garlic into the center. Cook 30 seconds until the aroma fills the room but the garlic is still pale gold.
- Add the 6 oz of baby spinach in two batches. It will look like a mountain, but it collapses in seconds.
- Pour in the juice from your lemon. Stir constantly until the liquid evaporates and the spinach is velvety.
- Remove the pan from the heat. Fold in the lemon zest and 2 tbsp fresh parsley.
- Let the dish sit for 2 minutes to allow the flavors to meld before plating.
