Ingredients:

  • 1 lb lean ground turkey (93% lean)
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp smoked paprika
  • 6 oz fresh baby spinach
  • 1 large lemon, zested and juiced
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Mince your 4 cloves of garlic and zest your lemon.
  2. Add 2 tbsp of extra virgin olive oil to a large pan over medium high heat. Cook until the oil shimmers and a drop of water flicked in sizzles instantly.
  3. Add the 1 lb of ground turkey to the hot pan. Don't break it up immediately; let it sit for 60 seconds to develop a golden crust.
  4. Use a wooden spoon to break the turkey into bite-sized crumbles. Sprinkle in the 1/2 tsp sea salt, 1/4 tsp pepper, and 1/2 tsp smoked paprika.
  5. Toss in the 1/2 tsp crushed red pepper flakes. Sauté 5 minutes until the meat is no longer pink and looks slightly crispy on the edges.
  6. Push the meat to the sides and drop the minced garlic into the center. Cook 30 seconds until the aroma fills the room but the garlic is still pale gold.
  7. Add the 6 oz of baby spinach in two batches. It will look like a mountain, but it collapses in seconds.
  8. Pour in the juice from your lemon. Stir constantly until the liquid evaporates and the spinach is velvety.
  9. Remove the pan from the heat. Fold in the lemon zest and 2 tbsp fresh parsley.
  10. Let the dish sit for 2 minutes to allow the flavors to meld before plating.
