Ingredients:
- 2 cups (300g) frozen pineapple chunks
- 1/2 cup (120ml) 100% pineapple juice
- 1/2 cup (125g) plain Greek yogurt
- 1/4 cup (60ml) full fat coconut milk
- 1 tsp (5ml) fresh lime juice
- 1 tsp (5g) fresh ginger, grated
- 1 tbsp (15ml) honey
Instructions:
- Pour the 1/2 cup pineapple juice into the blender first. Note: Liquid at the bottom prevents the blades from spinning fruitlessly.
- Add the 1/4 cup coconut milk and 1/2 cup Greek yogurt to the liquid base.
- Squeeze in the 1 tsp fresh lime juice, being careful to catch any seeds.
- Grate the 1 tsp fresh ginger directly over the liquids.
- Drizzle the 1 tbsp honey into the center of the jar.
- Dump the 2 cups frozen pineapple chunks on top of everything else. Note: The weight of the fruit helps push everything into the blades.
- Secure the lid and start the blender on the lowest speed setting.
- Increase to high speed until the mixture is swirling in a consistent vortex.
- Stop and scrape the sides with a spatula if any stray pineapple chunks are clinging to the jar.
- Blend for another 20 seconds until the texture is completely velvety and pale yellow.
