Ingredients:
- 1 cup (225g) full-fat cottage cheese
- 2 large eggs
- 1/2 tsp dried Italian seasoning
- 1 tbsp grated Parmesan cheese
- 1/4 tsp garlic powder
- 1 pinch sea salt
Instructions:
- Preheat your oven to 375°F (190°C) and line a standard 10x15 inch baking sheet with parchment paper.
- Combine the cottage cheese, eggs, Italian seasoning, Parmesan cheese, garlic powder, and sea salt in a high-speed blender.
- Blitz on high for 30–45 seconds until the mixture is a completely smooth, pale yellow liquid with no visible curds.
- Pour the mixture into the center of the parchment-lined baking sheet. Use an offset spatula to spread it evenly toward the edges in a rectangular shape, roughly 1/8th of an inch thick.
- Bake for 22–25 minutes until the edges pull away from the parchment and the surface is a golden mahogany color and firm to the touch.
- Remove from the oven and let it cool slightly before carefully peeling away the parchment paper.
