Ingredients:

  • 4 cups rotisserie chicken, shredded or cubed (450g)
  • 1 cup red grapes, halved (150g)
  • 2 stalks celery, finely diced (100g)
  • 1/4 cup red onion, minced (40g)
  • 1/2 cup toasted pecans, chopped (60g)
  • 2 tbsp fresh chives, chopped (6g)
  • 1/3 cup avocado oil mayonnaise (75g)
  • 1/3 cup plain non-fat Greek yogurt (80g)
  • 1 tbsp fresh lemon juice (15g)
  • 1 tsp Dijon mustard (5g)
  • 1/2 tsp dried dill (0.5g)
  • 1/2 tsp sea salt (3g)
  • 1/4 tsp cracked black pepper (0.5g)

Instructions:

  1. Wash and dry all produce. Dice the celery and mince the onion into uniform, small pieces. Halve the grapes lengthwise to ensure they stay contained in sandwiches or wraps.
  2. In a large mixing bowl, whisk together the avocado oil mayonnaise, Greek yogurt, lemon juice, Dijon mustard, dried dill, sea salt, and black pepper until the dressing is glossy and smooth.
  3. Add the prepared rotisserie chicken, diced celery, minced onions, halved grapes, and toasted pecans to the bowl. Use a silicone spatula to gently fold the ingredients until the chicken is evenly coated in the dressing.
