Ingredients:
- 4 cups rotisserie chicken, shredded or cubed (450g)
- 1 cup red grapes, halved (150g)
- 2 stalks celery, finely diced (100g)
- 1/4 cup red onion, minced (40g)
- 1/2 cup toasted pecans, chopped (60g)
- 2 tbsp fresh chives, chopped (6g)
- 1/3 cup avocado oil mayonnaise (75g)
- 1/3 cup plain non-fat Greek yogurt (80g)
- 1 tbsp fresh lemon juice (15g)
- 1 tsp Dijon mustard (5g)
- 1/2 tsp dried dill (0.5g)
- 1/2 tsp sea salt (3g)
- 1/4 tsp cracked black pepper (0.5g)
Instructions:
- Wash and dry all produce. Dice the celery and mince the onion into uniform, small pieces. Halve the grapes lengthwise to ensure they stay contained in sandwiches or wraps.
- In a large mixing bowl, whisk together the avocado oil mayonnaise, Greek yogurt, lemon juice, Dijon mustard, dried dill, sea salt, and black pepper until the dressing is glossy and smooth.
- Add the prepared rotisserie chicken, diced celery, minced onions, halved grapes, and toasted pecans to the bowl. Use a silicone spatula to gently fold the ingredients until the chicken is evenly coated in the dressing.
