Ingredients:
- 1.5 cups fresh peaches, peeled and diced (225g)
- 1 tbsp all-purpose flour (8g)
- 0.5 tsp ground cinnamon (1g)
- 2 cups all-purpose flour (250g)
- 0.75 cup granulated sugar (150g)
- 1 tbsp baking powder (12g)
- 0.5 tsp salt (3g)
- 0.5 cup unsalted butter, melted and cooled (113g)
- 1 large egg, room temperature
- 0.5 cup whole milk or buttermilk (120ml)
- 1 tsp pure vanilla extract (5ml)
- 1 cup powdered sugar (120g)
- 2 tbsp peach juice or milk (30ml)
- 0.25 tsp vanilla extract (1ml)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- In a medium bowl, toss diced peaches with 1 tablespoon of flour and the cinnamon to prevent sinking during baking.
- In a large bowl, whisk together the 2 cups of flour, sugar, baking powder, and salt.
- In a separate bowl, beat the egg, then stir in the melted butter, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined; do not overmix.
- Gently fold the coated peaches into the batter using a spatula.
- Pour the mixture into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes until the top is deep golden brown and a toothpick inserted into the center comes out clean.
- Optional: Whisk powdered sugar, peach juice, and vanilla extract to create a glaze and drizzle over the cooled bread.
