Ingredients:

  • 3 cups (450g) shredded rotisserie chicken
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120g) sour cream
  • 5 medium jalapeños, seeded and finely diced
  • 1 tsp (5g) garlic powder
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 2 cups (230g) shredded sharp cheddar cheese
  • 32 oz (900g) frozen tater tots
  • 6 slices (60g) cooked bacon, crumbled

Instructions:

  1. Preheat oven to 400°F (200°C). Spread frozen tater tots on a baking sheet and bake for 10-12 minutes until slightly firm.
  2. In a large mixing bowl, beat softened cream cheese and sour cream until smooth. Stir in diced jalapeños, garlic powder, salt, pepper, and 1 cup of shredded cheddar cheese.
  3. Gently fold the shredded rotisserie chicken into the cream cheese mixture until evenly coated.
  4. Spread the chicken mixture evenly into the bottom of a 9x13 inch baking dish.
  5. Layer the par-baked tater tots in a single tight row over the chicken filling. Sprinkle the remaining 1 cup of cheddar cheese and crumbled bacon on top.
  6. Bake for 15-20 minutes until the cheese is bubbling and the tots are deep golden-brown.
