Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk
  • 2 cans (15 oz each) sliced peaches in heavy syrup
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Pour the melted butter into a 9-inch cast-iron skillet or baking dish, swirling it to ensure the bottom and sides are thoroughly coated.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until just combined; the batter should be smooth with only a few small lumps.
  3. Pour the batter directly over the melted butter in the baking dish. Do not stir the layers.
  4. Carefully spoon the peaches and their syrup over the top of the batter and spread them evenly with a spatula.
  5. Sprinkle the 1 tsp ground cinnamon and nutmeg over the peaches.
  6. Bake for 40–45 minutes until the batter rises around the peaches and turns a deep golden brown, and the center feels set.
  7. Finish the dish by sprinkling the brown sugar and remaining 1/2 tsp cinnamon over the top.
