Ingredients:
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 cup whole milk
- 2 cans (15 oz each) sliced peaches in heavy syrup
- 2 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp brown sugar
- 1/2 tsp ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Pour the melted butter into a 9-inch cast-iron skillet or baking dish, swirling it to ensure the bottom and sides are thoroughly coated.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk until just combined; the batter should be smooth with only a few small lumps.
- Pour the batter directly over the melted butter in the baking dish. Do not stir the layers.
- Carefully spoon the peaches and their syrup over the top of the batter and spread them evenly with a spatula.
- Sprinkle the 1 tsp ground cinnamon and nutmeg over the peaches.
- Bake for 40–45 minutes until the batter rises around the peaches and turns a deep golden brown, and the center feels set.
- Finish the dish by sprinkling the brown sugar and remaining 1/2 tsp cinnamon over the top.
