Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- ½ cup (100g) light brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- ½ cup (113g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- ⅛ tsp (0.75g) salt
- 1 cup (240ml) whole milk
Instructions:
- Preheat your oven to 350°F (175°C).
- Pour the melted butter (½ cup / 113g) directly into the bottom of a 9x13 inch baking dish, tilting the pan to ensure the bottom is completely coated. Place the dish in the oven for 2–3 minutes to warm the butter, then remove.
- In a separate bowl, toss the sliced peaches (6 cups / 900g) with brown sugar (½ cup / 100g), cinnamon (1 tsp / 2g), and lemon juice (1 tbsp / 15ml).
- Spoon the peach mixture evenly over the melted butter in the baking dish and spread into a level layer.
- In a mixing bowl, whisk together flour (1 cup / 125g), granulated sugar (1 cup / 200g), baking powder (1 tbsp / 12g), and salt (⅛ tsp / 0.75g).
- Stir in the milk (1 cup / 240ml) until just combined, leaving a few small lumps.
- Pour the batter slowly over the peaches and spread gently with a spoon; do not stir the batter into the fruit.
- Bake for 45–50 minutes until the edges pull away slightly from the pan and the top is a deep golden-brown color.
