Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • ½ cup (100g) light brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • ½ cup (113g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • ⅛ tsp (0.75g) salt
  • 1 cup (240ml) whole milk

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted butter (½ cup / 113g) directly into the bottom of a 9x13 inch baking dish, tilting the pan to ensure the bottom is completely coated. Place the dish in the oven for 2–3 minutes to warm the butter, then remove.
  3. In a separate bowl, toss the sliced peaches (6 cups / 900g) with brown sugar (½ cup / 100g), cinnamon (1 tsp / 2g), and lemon juice (1 tbsp / 15ml).
  4. Spoon the peach mixture evenly over the melted butter in the baking dish and spread into a level layer.
  5. In a mixing bowl, whisk together flour (1 cup / 125g), granulated sugar (1 cup / 200g), baking powder (1 tbsp / 12g), and salt (⅛ tsp / 0.75g).
  6. Stir in the milk (1 cup / 240ml) until just combined, leaving a few small lumps.
  7. Pour the batter slowly over the peaches and spread gently with a spoon; do not stir the batter into the fruit.
  8. Bake for 45–50 minutes until the edges pull away slightly from the pan and the top is a deep golden-brown color.
