Ingredients:

  • 225g unsalted butter, softened
  • 300g granulated sugar
  • 4 large eggs, room temperature
  • 450g all-purpose flour, sifted
  • 15g baking powder
  • 120g full fat Greek yogurt
  • 120ml fresh orange juice
  • 2 tbsp orange zest
  • 1 tbsp vanilla extract
  • 0.5 tsp fine sea salt
  • 50g powdered sugar for dusting
  • 1 clean coin wrapped in aluminum foil

Instructions:

  1. In a large bowl, combine the softened butter, sugar, and orange zest. Beat on medium-high speed for 5 minutes until the mixture is pale, fluffy, and increased in volume.
  2. Add the eggs one at a time, beating well after each addition to maintain the emulsion. Mix in the vanilla extract, Greek yogurt, and orange juice.
  3. Whisk the sifted flour, baking powder, and salt together. Gradually add the dry ingredients to the wet mixture on low speed, stopping as soon as white streaks of flour disappear.
  4. Pour the batter into a 10 inch springform pan. Wrap your clean coin in foil. Pour the batter into the pan and drop the coin in. Use a spatula to smooth the top.
  5. Bake for 50 minutes or until a skewer inserted into the center comes out clean. Allow to cool before dusting with powdered sugar using stencils for the year.
