Ingredients:
- 225g unsalted butter, softened
- 300g granulated sugar
- 4 large eggs, room temperature
- 450g all-purpose flour, sifted
- 15g baking powder
- 120g full fat Greek yogurt
- 120ml fresh orange juice
- 2 tbsp orange zest
- 1 tbsp vanilla extract
- 0.5 tsp fine sea salt
- 50g powdered sugar for dusting
- 1 clean coin wrapped in aluminum foil
Instructions:
- In a large bowl, combine the softened butter, sugar, and orange zest. Beat on medium-high speed for 5 minutes until the mixture is pale, fluffy, and increased in volume.
- Add the eggs one at a time, beating well after each addition to maintain the emulsion. Mix in the vanilla extract, Greek yogurt, and orange juice.
- Whisk the sifted flour, baking powder, and salt together. Gradually add the dry ingredients to the wet mixture on low speed, stopping as soon as white streaks of flour disappear.
- Pour the batter into a 10 inch springform pan. Wrap your clean coin in foil. Pour the batter into the pan and drop the coin in. Use a spatula to smooth the top.
- Bake for 50 minutes or until a skewer inserted into the center comes out clean. Allow to cool before dusting with powdered sugar using stencils for the year.
