Ingredients:
- 2 cups (300g) fresh peaches, peeled and pitted
- 1 tbsp (15ml) lemon juice
- 1/4 tsp (1.25g) ground cinnamon
- 2 cups (480ml) heavy whipping cream, cold
- 1 can (14 oz / 397g) sweetened condensed milk
- 1 tsp (5ml) pure vanilla extract
- Pinch (0.5g) of salt
Instructions:
- Place 1 1/2 cups of the peeled peaches into a food processor and blend until smooth but thick.
- Finely dice the remaining 1/2 cup of peaches into small, pea-sized chunks.
- Stir the lemon juice and cinnamon into the peach puree and set aside.
- In a chilled bowl, beat the cold heavy whipping cream on medium-high speed until stiff peaks form.
- In a separate large bowl, whisk together the sweetened condensed milk, vanilla extract, and salt until smooth.
- Gently fold the whipped cream into the condensed milk mixture using a spatula in a figure-eight motion to keep the air bubbles intact.
- Fold in the peach puree and the diced peach chunks until just combined, taking care not to overmix.
- Pour the mixture into a 9x5 inch metal loaf pan and freeze for 8 hours or until set.
