Ingredients:

  • 2 cups (300g) fresh peaches, peeled and pitted
  • 1 tbsp (15ml) lemon juice
  • 1/4 tsp (1.25g) ground cinnamon
  • 2 cups (480ml) heavy whipping cream, cold
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 1 tsp (5ml) pure vanilla extract
  • Pinch (0.5g) of salt

Instructions:

  1. Place 1 1/2 cups of the peeled peaches into a food processor and blend until smooth but thick.
  2. Finely dice the remaining 1/2 cup of peaches into small, pea-sized chunks.
  3. Stir the lemon juice and cinnamon into the peach puree and set aside.
  4. In a chilled bowl, beat the cold heavy whipping cream on medium-high speed until stiff peaks form.
  5. In a separate large bowl, whisk together the sweetened condensed milk, vanilla extract, and salt until smooth.
  6. Gently fold the whipped cream into the condensed milk mixture using a spatula in a figure-eight motion to keep the air bubbles intact.
  7. Fold in the peach puree and the diced peach chunks until just combined, taking care not to overmix.
  8. Pour the mixture into a 9x5 inch metal loaf pan and freeze for 8 hours or until set.
