Ingredients:
- 4 cups (600g) fresh peaches, sliced
- 2 tbsp (30ml) lemon juice
- 2 tbsp (42g) honey
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) sea salt
- 1 cup (96g) almond flour
- 1/2 cup (45g) rolled oats
- 3 tbsp (42g) coconut oil
- 2 tbsp (42g) honey
- 1/2 tsp (1g) vanilla extract
- 1/4 tsp (1.5g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, toss sliced peaches with lemon juice, honey, cinnamon, and salt. Transfer the mixture into an 8x8 inch baking dish, spreading them evenly.
- In a medium bowl, combine almond flour, rolled oats, and cinnamon.
- Stir in the melted coconut oil, honey, and vanilla extract. Use a fork to mash the mixture until it forms small, pea-sized clumps.
- Spoon the crumble evenly over the peaches.
- Bake for 25–30 minutes until the peach juices are bubbling around the edges and the topping is mahogany-colored and crisp.
