Ingredients:

  • 4 cups (600g) fresh peaches, sliced
  • 2 tbsp (30ml) lemon juice
  • 2 tbsp (42g) honey
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) sea salt
  • 1 cup (96g) almond flour
  • 1/2 cup (45g) rolled oats
  • 3 tbsp (42g) coconut oil
  • 2 tbsp (42g) honey
  • 1/2 tsp (1g) vanilla extract
  • 1/4 tsp (1.5g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss sliced peaches with lemon juice, honey, cinnamon, and salt. Transfer the mixture into an 8x8 inch baking dish, spreading them evenly.
  3. In a medium bowl, combine almond flour, rolled oats, and cinnamon.
  4. Stir in the melted coconut oil, honey, and vanilla extract. Use a fork to mash the mixture until it forms small, pea-sized clumps.
  5. Spoon the crumble evenly over the peaches.
  6. Bake for 25–30 minutes until the peach juices are bubbling around the edges and the topping is mahogany-colored and crisp.
