Ingredients:

  • 4 large fresh peaches, pitted and sliced into thick wedges
  • 2 tbsp unsalted butter
  • 1/4 cup light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 pint vanilla ice cream

Instructions:

  1. Slice the peaches into uniform wedges (about 6-8 per peach) and pat them dry with a paper towel to remove excess moisture.
  2. Melt the butter in a 12-inch cast iron or non-stick skillet over medium-high heat until it begins to foam.
  3. Arrange the peach wedges in a single layer in the skillet. Sprinkle the brown sugar, cinnamon, and salt evenly across the fruit.
  4. Sear for 2–3 minutes per side without moving them, until the edges are mahogany-colored and the sugar has turned into a bubbling, amber syrup.
  5. Place two generous scoops of vanilla ice cream into chilled bowls.
  6. Immediately spoon the hot peaches and the remaining pan syrup over the ice cream.
