Ingredients:
- 4 large fresh peaches, pitted and sliced into thick wedges
- 2 tbsp unsalted butter
- 1/4 cup light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 pint vanilla ice cream
Instructions:
- Slice the peaches into uniform wedges (about 6-8 per peach) and pat them dry with a paper towel to remove excess moisture.
- Melt the butter in a 12-inch cast iron or non-stick skillet over medium-high heat until it begins to foam.
- Arrange the peach wedges in a single layer in the skillet. Sprinkle the brown sugar, cinnamon, and salt evenly across the fruit.
- Sear for 2–3 minutes per side without moving them, until the edges are mahogany-colored and the sugar has turned into a bubbling, amber syrup.
- Place two generous scoops of vanilla ice cream into chilled bowls.
- Immediately spoon the hot peaches and the remaining pan syrup over the ice cream.
