Ingredients:

  • 6 cups (900g) fresh August peaches, peeled and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 6 tbsp (85g) unsalted butter

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, toss the sliced peaches with the lemon juice, 1/2 cup sugar, cinnamon, and salt. Let the mixture sit for 5 minutes to allow a syrup to form.
  3. Place 6 tbsp of butter in a 9x9 inch baking dish and place it in the oven for 2-3 minutes until the butter is melted and bubbling.
  4. While the butter melts, whisk together the flour, 1 cup sugar, baking powder, and salt in a mixing bowl.
  5. Stir milk into the flour mixture until the batter is smooth.
  6. Remove the hot baking dish from the oven and pour the batter directly over the melted butter without stirring.
  7. Spoon the prepared peach mixture evenly over the top of the batter, gently pushing a few peach slices into the batter with a spoon.
  8. Bake for 30 minutes until the top is golden brown and the batter has risen around the fruit.
