Ingredients:
- 6 cups (900g) fresh August peaches, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 6 tbsp (85g) unsalted butter
Instructions:
- Preheat your oven to 375°F (190°C).
- In a medium bowl, toss the sliced peaches with the lemon juice, 1/2 cup sugar, cinnamon, and salt. Let the mixture sit for 5 minutes to allow a syrup to form.
- Place 6 tbsp of butter in a 9x9 inch baking dish and place it in the oven for 2-3 minutes until the butter is melted and bubbling.
- While the butter melts, whisk together the flour, 1 cup sugar, baking powder, and salt in a mixing bowl.
- Stir milk into the flour mixture until the batter is smooth.
- Remove the hot baking dish from the oven and pour the batter directly over the melted butter without stirring.
- Spoon the prepared peach mixture evenly over the top of the batter, gently pushing a few peach slices into the batter with a spoon.
- Bake for 30 minutes until the top is golden brown and the batter has risen around the fruit.
