Ingredients:
- 2.5 cups (310g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 0.5 tsp (3g) salt
- 0.75 cup (175ml) vegetable oil
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1 cup (240ml) whole milk
- 3 cups (450g) fresh peaches, peeled and sliced
- 1 tbsp (8g) granulated sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease your 9x13 pan with butter or line it with parchment paper.
- Peel and slice the peaches into 1/2-inch wedges. In a small bowl, toss the peaches with cinnamon and 1 tablespoon of sugar until evenly coated.
- In a large bowl, combine the flour, sugar, baking powder, and salt. Whisk thoroughly to remove lumps.
- Create a well in the center of the dry ingredients. Pour in the oil, eggs, vanilla, and milk.
- Stir with a spatula until just combined; stop as soon as no dry flour streaks remain to avoid a tough texture.
- Gently fold in half of the prepared peaches, ensuring they are distributed evenly.
- Pour the batter into the prepared pan. Arrange the remaining peach slices on top in a decorative pattern.
- Bake on the center rack of the oven for 45–50 minutes.
