Ingredients:
- 2 cans (15 oz / 425g each) sliced peaches in heavy syrup
- 2 tbsp (30ml) lemon juice
- 1/2 tsp (2g) ground cinnamon
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (125g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
Instructions:
- Preheat your oven to 350°F (175°C).
- Pour the melted butter into the bottom of a 9x9 inch baking dish, swirling it to ensure the bottom and sides are lightly coated.
- In a separate bowl, toss the sliced peaches with lemon juice and cinnamon.
- Carefully pour the peach mixture and its syrup into the butter-lined dish and spread the peaches evenly with a spatula.
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Stir in the milk until the batter is smooth, ensuring not to overmix.
- Pour the batter directly over the peaches. Do not stir the layers.
- Bake for 35-45 minutes until the top is mahogany-colored and peach juices are bubbling around the edges.
