Ingredients:

  • 2 cans (15 oz / 425g each) sliced peaches in heavy syrup
  • 2 tbsp (30ml) lemon juice
  • 1/2 tsp (2g) ground cinnamon
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Pour the melted butter into the bottom of a 9x9 inch baking dish, swirling it to ensure the bottom and sides are lightly coated.
  3. In a separate bowl, toss the sliced peaches with lemon juice and cinnamon.
  4. Carefully pour the peach mixture and its syrup into the butter-lined dish and spread the peaches evenly with a spatula.
  5. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  6. Stir in the milk until the batter is smooth, ensuring not to overmix.
  7. Pour the batter directly over the peaches. Do not stir the layers.
  8. Bake for 35-45 minutes until the top is mahogany-colored and peach juices are bubbling around the edges.
