Ingredients:

  • 2 cups (300g) fresh peaches, sliced
  • 1/4 cup (50g) granulated sugar
  • 1 tsp (5ml) lemon juice
  • 1/2 tsp (2g) ground cinnamon
  • 1 cup (225g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • 1/2 tsp (3g) salt
  • 1/2 cup (120ml) whole milk
  • 2 tbsp (30g) unsalted butter, melted

Instructions:

  1. In a medium bowl, toss the sliced peaches with granulated sugar, lemon juice, and cinnamon. Let them sit for 10 minutes until the peaches release their natural syrups.
  2. In a large bowl, whisk the melted butter and sugar until smooth. Add eggs one at a time, whisking vigorously, then stir in the vanilla extract.
  3. Gently fold in the flour, baking powder, and salt.
  4. Slowly pour in the milk, stirring until the batter is velvety and no dry flour streaks remain. Do not overmix.
  5. Pour 2 tbsp (30g) of additional melted butter into the bottom of a prepared 9x9 inch baking pan to ensure a golden crust.
  6. Pour the batter evenly into the pan. Carefully arrange the peach slices on top, pressing them slightly into the batter.
  7. Bake at 350°F (175°C) for 50–55 minutes.
