Ingredients:
- 2 cups (300g) fresh peaches, sliced
- 1/4 cup (50g) granulated sugar
- 1 tsp (5ml) lemon juice
- 1/2 tsp (2g) ground cinnamon
- 1 cup (225g) unsalted butter, melted and slightly cooled
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) whole milk
- 2 tbsp (30g) unsalted butter, melted
Instructions:
- In a medium bowl, toss the sliced peaches with granulated sugar, lemon juice, and cinnamon. Let them sit for 10 minutes until the peaches release their natural syrups.
- In a large bowl, whisk the melted butter and sugar until smooth. Add eggs one at a time, whisking vigorously, then stir in the vanilla extract.
- Gently fold in the flour, baking powder, and salt.
- Slowly pour in the milk, stirring until the batter is velvety and no dry flour streaks remain. Do not overmix.
- Pour 2 tbsp (30g) of additional melted butter into the bottom of a prepared 9x9 inch baking pan to ensure a golden crust.
- Pour the batter evenly into the pan. Carefully arrange the peach slices on top, pressing them slightly into the batter.
- Bake at 350°F (175°C) for 50–55 minutes.
