- 3 cups (420g) shredded rotisserie chicken
- 2 cups (225g) shredded Mexican blend cheese
- ½ cup (60g) diced yellow onion
- ½ cup (60g) diced bell pepper
- 1 tsp (5g) garlic powder
- 1 tsp (5g) smoked paprika
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 4 large (10-inch) flour tortillas
- 2 tbsp (28g) unsalted butter
Instructions:
- Combine shredded rotisserie chicken, diced onions, and bell peppers in a large bowl.
- Stir in garlic powder, smoked paprika, salt, and black pepper. Note: Coating the chicken first ensures no bland bites.
- Fold in the shredded cheese until the mixture is well distributed.
- Place a flour tortilla on a clean surface. Spread roughly ¾ cup of the chicken mixture over one half of the tortilla.
- Press down slightly to ensure the filling is level, then fold the empty half over to create a half moon.
- Melt 1 tablespoon of butter in the skillet over medium heat.
- Place the folded Rotisserie Chicken Quesadillas in the pan.
- Grill 3-4 minutes per side until the tortilla is mahogany colored and the cheese has reached a velvety, melted consistency.
- Remove and let rest for 1 minute before slicing into wedges.
