Ingredients:

  • 3 cups (420g) shredded rotisserie chicken
  • 2 cups (225g) shredded Mexican blend cheese
  • ½ cup (60g) diced yellow onion
  • ½ cup (60g) diced bell pepper
  • 1 tsp (5g) garlic powder
  • 1 tsp (5g) smoked paprika
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper
  • 4 large (10-inch) flour tortillas
  • 2 tbsp (28g) unsalted butter

Instructions:

  1. Combine shredded rotisserie chicken, diced onions, and bell peppers in a large bowl.
  2. Stir in garlic powder, smoked paprika, salt, and black pepper. Note: Coating the chicken first ensures no bland bites.
  3. Fold in the shredded cheese until the mixture is well distributed.
  4. Place a flour tortilla on a clean surface. Spread roughly ¾ cup of the chicken mixture over one half of the tortilla.
  5. Press down slightly to ensure the filling is level, then fold the empty half over to create a half moon.
  6. Melt 1 tablespoon of butter in the skillet over medium heat.
  7. Place the folded Rotisserie Chicken Quesadillas in the pan.
  8. Grill 3-4 minutes per side until the tortilla is mahogany colored and the cheese has reached a velvety, melted consistency.
  9. Remove and let rest for 1 minute before slicing into wedges.
