Ingredients:
- 75 fl oz (50 ml) Aged or Gold Rum
- 5 fl oz (100 ml) Unsweetened Pineapple Juice
- 5 fl oz (15 ml) Fresh Lime Juice
- 5 fl oz (15 ml) Cane Sugar Simple Syrup (optional, adjust to taste)
- 2 dashes Angostura Bitters
- Ice (high-quality cubes, as needed)
- 1 Pineapple Wedge or Spear (for garnish)
- 1 Maraschino Cherry (optional, for garnish)
Instructions:
- Preparation and Chilling: Fill the serving glass (Highball or Tiki Mug) with ice water or place it in the freezer to chill. Discard the chilling ice/water before proceeding. Slice the pineapple garnish.
- Combine Liquids: Pour the fresh Lime Juice and Simple Syrup (if using) into the base of the cocktail shaker. Add the Pineapple Juice and the Aged Rum.
- Shake: Add 2 dashes of Angostura Bitters. Fill the shaker three-quarters full with fresh, high-quality ice cubes. Secure the lid and shake very vigorously for 15 to 20 seconds, until the exterior of the metal shaker is heavily frosted.
- Strain and Serve: Fill the chilled serving glass with fresh ice cubes. Double strain the cocktail mixture into the prepared glass using the shaker’s built-in strainer and/or a fine-mesh sieve.
- Garnish: Place the pineapple wedge or spear on the rim, and add the maraschino cherry (if using). Serve immediately.
