Ingredients:

  • 225g unsalted European-style butter
  • 130g shelled, roasted, and lightly salted pistachios, roughly chopped
  • 200g dark brown sugar, packed
  • 100g granulated sugar
  • 325g all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp fine kosher salt
  • 200g dark chocolate (60-70% cacao), hand-chopped
  • 1 tbsp pure vanilla extract
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tsp flaky sea salt, for finishing

Instructions:

  1. Place 225g unsalted European style butter in a stainless steel saucepan over medium heat. Melt and continue cooking, whisking constantly, until foam subsides and toasted brown bits form at the bottom. Note: This process takes about 5-8 minutes and develops the nutty aroma.
  2. Immediately transfer the hot brown butter to a heat proof bowl and whisk in 200g dark brown sugar and 100g granulated sugar. Note: Adding the sugar now cools the butter and begins the flavor infusion.
  3. Whisk 1 large egg, 1 egg yolk, and 1 tbsp vanilla extract into the mixture. Beat vigorously for 2 minutes until the mixture lightens in color and looks like shiny caramel.
  4. In a separate bowl, whisk together 325g all purpose flour, 1 tsp baking soda, 0.5 tsp baking powder, and 1 tsp fine kosher salt.
  5. Fold the dry ingredients into the wet mixture using a rubber spatula. Stop as soon as no flour streaks remain to avoid over developing the gluten.
  6. Fold in 200g hand chopped dark chocolate and 130g chopped pistachios. Ensure they are distributed evenly throughout the dough.
  7. Using a 2 tablespoon cookie scoop, portion the dough into 18 balls and place them on parchment lined baking sheets.
  8. Space the dough balls at least 3 inches apart to allow for the natural spread of the fats.
  9. Bake at 350°F (175°C) for 10 minutes until the edges are golden brown and the centers are still slightly soft.
  10. Remove from the oven and immediately sprinkle with 1 tsp flaky sea salt. Let them rest on the pan for 5 minutes until they firm up enough to move.
