Ingredients:
- 4 cups sliced fresh peaches
- 1/4 cup maple syrup
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 1 cup whole wheat pastry flour
- 1/4 cup cane sugar
- 1 1/2 tsp baking powder
- 3/4 cup whole milk
- 1 tsp vanilla extract
Instructions:
- Peel and slice peaches into 1/2 inch wedges.
- In a bowl, combine peaches, maple syrup, lemon juice, cornstarch, cinnamon, and salt. Toss until coated and set aside for 10 minutes.
- Preheat oven to 350°F (175°C). Melt the butter in a 9x9 inch baking dish in the oven or microwave until completely liquid.
- In a mixing bowl, whisk together flour, sugar, and baking powder. Stir in milk and vanilla extract until the batter is smooth and thick.
- Pour the batter directly over the melted butter in the baking dish without stirring.
- Carefully spoon the peach mixture over the top of the batter and spread evenly.
- Bake for 45 minutes or until the crust is golden brown and the filling is bubbling.
