Ingredients:

  • 4 cups sliced fresh peaches
  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1 cup whole wheat pastry flour
  • 1/4 cup cane sugar
  • 1 1/2 tsp baking powder
  • 3/4 cup whole milk
  • 1 tsp vanilla extract

Instructions:

  1. Peel and slice peaches into 1/2 inch wedges.
  2. In a bowl, combine peaches, maple syrup, lemon juice, cornstarch, cinnamon, and salt. Toss until coated and set aside for 10 minutes.
  3. Preheat oven to 350°F (175°C). Melt the butter in a 9x9 inch baking dish in the oven or microwave until completely liquid.
  4. In a mixing bowl, whisk together flour, sugar, and baking powder. Stir in milk and vanilla extract until the batter is smooth and thick.
  5. Pour the batter directly over the melted butter in the baking dish without stirring.
  6. Carefully spoon the peach mixture over the top of the batter and spread evenly.
  7. Bake for 45 minutes or until the crust is golden brown and the filling is bubbling.
