Ingredients:

  • 1 cup (245g) Plain Greek Yogurt
  • 1/2 cup (75g) Fresh Strawberries, finely diced
  • 1.5 tbsp (30g) Raw Honey

Instructions:

  1. Prep the tray. Line a large flat baking sheet with parchment paper. Note: Silicone mats also work but parchment is easier to peel from.
  2. Dice the berries. Chop the 75g of strawberries into very fine, uniform pieces. Checkpoint: Aim for the size of a pea.
  3. Combine the base. Place the 245g of Greek yogurt into your mixing bowl.
  4. Add the sweetener. Pour in the 30g of honey and stir gently. Stir until the honey streaks disappear.
  5. Fold the fruit. Toss the diced strawberries into the yogurt.
  6. Mix carefully. Use a spatula to fold the berries in. Note: Do not over mix or the yogurt will turn pink and lose its thickness.
  7. Portion the bites. Drop small spoonfuls onto the parchment paper. Space them 2cm apart to prevent sticking.
  8. Initial Freeze. Place the tray flat in the freezer for 2 hours. Freeze until they are firm to the touch.
  9. Release and pack. Peel the bites off the paper once fully frozen. Do this quickly so they don't soften.
  10. Final Store. Transfer the strawberry yogurt clusters without chocolate into a freezer bag.
