Ingredients:

  • 2 cups (300g) fresh peach slices
  • 1 tbsp (15ml) lemon juice
  • 1/4 tsp (1.5g) salt
  • 2 tbsp (28g) unsalted butter
  • 3 tbsp (35g) light brown sugar, packed
  • 1/2 tsp (2g) ground cinnamon
  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

  1. Pat the peach slices dry with a paper towel. In a bowl, gently toss the peaches with lemon juice and salt.
  2. Melt the unsalted butter in a 10-inch cast-iron skillet over medium-high heat until foaming. Add peach slices in a single layer and sear undisturbed for 2-3 minutes until edges are golden brown.
  3. Sprinkle brown sugar and ground cinnamon evenly over the peaches. Stir gently and cook for another 2-3 minutes until the sugar melts into a bubbling syrup.
  4. Remove the skillet from heat and immediately stir in the vanilla extract.
