Ingredients:

  • 6 cups fresh watermelon, seeded and cubed
  • 1/2 cup cold filtered water
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp raw honey
  • 4 small mint sprigs
  • 4 thin lime wheels

Instructions:

  1. Cut the watermelon into 1 inch cubes, removing any black seeds. Note: Small white seeds are fine to leave in.
  2. Spread the 6 cups of watermelon cubes on a tray in a single layer.
  3. Place the tray in the freezer for 4 hours until the cubes are rock solid.
  4. Whisk 1 tbsp raw honey into 1/2 cup cold water until the honey is fully dissolved.
  5. Place the frozen watermelon cubes into the blender jar first.
  6. Pour the honey water and 2 tbsp lime juice over the frozen fruit.
  7. Pulse five times to break up the large chunks until they look like coarse gravel.
  8. Blend on high for 30 to 45 seconds until the mixture is velvety and uniform.
  9. Pour into chilled glasses and top with a lime wheel and mint sprig.
