Ingredients:
- 2 large Honeycrisp or Fuji apples, cored and sliced into rings
- 2 cups cold water
- 1 tablespoon fresh lemon juice
- 1/2 cup creamy natural peanut butter (120g)
- 1/2 teaspoon ground cinnamon
- 1 teaspoon honey
- 1/4 cup low-sugar granola (30g)
- 1 tablespoon mini dark chocolate chips
- 1 tablespoon unsweetened shredded coconut
Instructions:
- Combine 2 cups of cold water and 1 tablespoon of fresh lemon juice in a large bowl.
- Core the whole apples and slice them crosswise into 1/2-inch thick rings to create a flat surface for toppings.
- Submerge the apple rings in a mixture of cold water and lemon juice for 3 minutes to prevent browning.
- Remove and pat completely dry with paper towels.
- In a small bowl, whisk the peanut butter, cinnamon, and honey until smooth.
- Spread an even layer of the mixture onto each dried apple ring.
- Sprinkle granola, mini dark chocolate chips, and shredded coconut over the peanut butter. Press down lightly to ensure the toppings adhere.
- Sprinkle mini dark chocolate chips over the peanut butter.
