Ingredients:

  • 2 large Honeycrisp or Fuji apples, cored and sliced into rings
  • 2 cups cold water
  • 1 tablespoon fresh lemon juice
  • 1/2 cup creamy natural peanut butter (120g)
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon honey
  • 1/4 cup low-sugar granola (30g)
  • 1 tablespoon mini dark chocolate chips
  • 1 tablespoon unsweetened shredded coconut

Instructions:

  1. Combine 2 cups of cold water and 1 tablespoon of fresh lemon juice in a large bowl.
  2. Core the whole apples and slice them crosswise into 1/2-inch thick rings to create a flat surface for toppings.
  3. Submerge the apple rings in a mixture of cold water and lemon juice for 3 minutes to prevent browning.
  4. Remove and pat completely dry with paper towels.
  5. In a small bowl, whisk the peanut butter, cinnamon, and honey until smooth.
  6. Spread an even layer of the mixture onto each dried apple ring.
  7. Sprinkle granola, mini dark chocolate chips, and shredded coconut over the peanut butter. Press down lightly to ensure the toppings adhere.
  8. Sprinkle mini dark chocolate chips over the peanut butter.
