Ingredients:

  • 1 lb fresh strawberries, firm with green stems
  • 8 oz high-quality dark or semi-sweet chocolate, chopped
  • 1 tsp refined coconut oil
  • 2 oz white chocolate for drizzling

Instructions:

  1. Wash the strawberries under cold water while keeping the green hulls attached. Pat each berry individually with a lint-free paper towel.
  2. Lay the strawberries out on a dry towel for at least 2 hours. Ensuring the surface is bone-dry prevents the chocolate from seizing or slipping off.
  3. Combine dark chocolate and coconut oil in a heat-proof bowl set over a simmering pot of water (double boiler). Stir until the chocolate is glossy and smooth.
  4. Hold a strawberry by the stem and submerge it into the melted chocolate. Lift and shake gently to remove excess before placing on a parchment-lined baking sheet.
  5. Melt the white chocolate and use a piping bag or fork to drizzle in a back-and-forth motion across the berries once the base layer is tacky.
  6. Allow the strawberries to set at room temperature for 15 minutes until the chocolate starts to look dull, then chill in the refrigerator for 30 minutes until the shell is firm.
