Ingredients:

  • 2 lbs bone-in, skin-on chicken thighs (approx. 4-6 pieces)
  • 2 tbsp avocado oil or ghee
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp cayenne pepper
  • 1.5 tsp sea salt
  • 1 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F.
  2. Pat the 2 lbs bone in, skin on chicken thighs dry with paper towels until the skin feels like parchment paper.
  3. Rub the 2 tbsp avocado oil all over the meat.
  4. Mix the smoked paprika, garlic powder, onion powder, oregano, cayenne, sea salt, and black pepper in a small bowl.
  5. Coat each piece generously with the spice blend. Ensure the underside is seasoned too.
  6. Place the meat on a wire rack over a baking sheet. Space them at least 2 inches apart.
  7. Roast for 35 minutes until the skin is bubbling and deep golden brown.
  8. Check for an internal temperature of 175°F.
  9. Remove from the oven and let them rest on the pan for 5 minutes to keep the meat succulent.
