Ingredients:
- 2 lbs sweet potatoes, diced into 1/2-inch cubes
- 2 tbsp avocado oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (205°C). Use a large rimmed baking sheet for maximum surface area.
- Wash the sweet potatoes and dice them into uniform 1/2-inch cubes. Keeping the skin on is recommended for extra crispness.
- In a large mixing bowl, toss the diced sweet potatoes with avocado oil, salt, black pepper, garlic powder, and smoked paprika until every cube is thoroughly coated.
- Spread the potatoes onto the baking sheet in a single layer. Ensure there is space between the cubes to prevent steaming.
- Roast for 15 minutes, then flip and roast for another 10 minutes until the edges are charred and the centers are tender.
- Remove from the oven once the edges are mahogany-colored and the exterior is crisp.
