Instructions:

  1. Preheat your oven to 400°F (205°C). Use a large rimmed baking sheet for maximum surface area.
  2. Wash the sweet potatoes and dice them into uniform 1/2-inch cubes. Keeping the skin on is recommended for extra crispness.
  3. In a large mixing bowl, toss the diced sweet potatoes with avocado oil, salt, black pepper, garlic powder, and smoked paprika until every cube is thoroughly coated.
  4. Spread the potatoes onto the baking sheet in a single layer. Ensure there is space between the cubes to prevent steaming.
  5. Roast for 15 minutes, then flip and roast for another 10 minutes until the edges are charred and the centers are tender.
  6. Remove from the oven once the edges are mahogany-colored and the exterior is crisp.
