Ingredients:
- 1/2 cup (115g) unsalted butter
- 3/4 cup (150g) packed light brown sugar
- 1 cup (240g) finely diced fresh peaches
- 1 tbsp (15ml) fresh lemon juice
- 1/4 tsp (1.5g) fine sea salt
Instructions:
- Place a small heavy-bottomed saucepan over medium heat. Add the butter and brown sugar, whisking constantly until the butter is fully melted and the sugar begins to bubble and foam.
- Fold in the diced peaches and salt. Reduce heat to medium-low and simmer gently for 5–7 minutes, lightly mashing some peach chunks against the side of the pan to release juices.
- Stir in the lemon juice. Continue to simmer for another 2–3 minutes until the glaze reaches a syrupy consistency that coats the back of a spoon and appears glossy.
