Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 3/4 cup (150g) packed light brown sugar
  • 1 cup (240g) finely diced fresh peaches
  • 1 tbsp (15ml) fresh lemon juice
  • 1/4 tsp (1.5g) fine sea salt

Instructions:

  1. Place a small heavy-bottomed saucepan over medium heat. Add the butter and brown sugar, whisking constantly until the butter is fully melted and the sugar begins to bubble and foam.
  2. Fold in the diced peaches and salt. Reduce heat to medium-low and simmer gently for 5–7 minutes, lightly mashing some peach chunks against the side of the pan to release juices.
  3. Stir in the lemon juice. Continue to simmer for another 2–3 minutes until the glaze reaches a syrupy consistency that coats the back of a spoon and appears glossy.
