Ingredients:
- 3 cups (375g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 3/4 cup (170g) unsalted butter, softened
- 3 large eggs
- 1 cup (240ml) buttermilk
- 1/4 cup (60ml) vegetable oil
- 2 tsp (10ml) pure vanilla extract
- 2 cups (450g) unsalted butter, softened
- 6 cups (720g) powdered sugar, sifted
- 3 tbsp (45ml) heavy cream
- 1 tsp (5ml) vanilla extract
- Pinch of salt
- Gel food coloring
- 1 oz (28g) gold star sprinkles
- 1 pre-made fondant graduation cap
- Black piping gel
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- Cream the softened butter and granulated sugar together using an electric mixer until the mixture is pale and fluffy.
- Incorporate eggs one by one, then stir in the vanilla extract and vegetable oil.
- Alternately add the flour, baking powder, and salt mixture and the buttermilk, mixing on low speed until just combined.
- Spread the batter evenly into the prepared pan and bake for 25 minutes, or until the edges pull away from the pan and the center springs back.
- Remove from oven and allow the cake to cool completely.
- Prepare the buttercream by whipping together the butter, powdered sugar, heavy cream, vanilla, and salt until smooth.
- Frost the cake and decorate using gel food coloring, gold star sprinkles, a fondant graduation cap, and black piping gel for calligraphy.
